Ridge Run Smokehouse isn't a concept restaurant. It's a Main Street pit joint that's been feeding Wayne County, Kentucky for 77 years — the same family, the same hickory, the same ridge-top pit.

No shortcuts. No gas. No apologies.
Every cut of meat that crosses our cutting board has spent the night with us. Brisket gets 16 hours. Mutton gets 14. Pork shoulders get pulled by hand the second they hit 203°.
We split our own wood — Kentucky hickory and white oak from the same forests our granddaddies hunted. We mop with a thirty-year-old sauce recipe written on a flour-dusted index card.
It's slower than it has to be. It's harder than it has to be. That's the whole point.

The first fire on the ridge
Earl Mae builds a brick pit on a hickory ridge above Monticello and opens a shotgun storefront on Main Street. Mutton goes on that first morning.

Burgoo on the menu
Earl's wife Granny Pearl adds her family burgoo recipe. It becomes the unofficial state stew of Wayne County.
- 1978
Second generation takes the tongs
Earl Jr. comes home from the Army, builds a new offset smoker by hand, and adds brisket and Texas-style ribs.

Catering the Commonwealth
After feeding 600 at the county fair, Ridge Run catering is born. Today we work events from Bowling Green to Big Sandy.

Southern Living names Ridge Run one of the 'Top 50 BBQ Joints in the South.' Lines start wrapping the block.

Mae's granddaughter Hattie takes over the pit. Same hickory. Same hours. Same ridge.
